Rachele De Giuseppe is an Assistant Professor (tenure-track, ORCID) in Dietetics and Clinical Nutrition at the University of Pavia, where she works within the Laboratory of Dietetics and Clinical Nutrition in the Department of Public Health, Experimental and Forensic Medicine. She earned her degree in Biological Sciences from the University of Milan, where she also completed a PhD in Biochemistry and a postgraduate specialisation in Food and Nutrition Science.
Her expertise covers Dietetics, Clinical Nutrition, and Lifestyle Medicine, with a life-course approach to health promotion and the prevention of non-communicable diseases (NCDs), including obesity, diabetes, cardiometabolic disorders, and neurodegenerative disorders. She researches malnutrition in all its forms (undernutrition and overnutrition) as key, modifiable factors influencing NCD risk and burden.
A core aspect of her research centres on nutritional biodiversity, which covers a wide variety of foods from different biological sources, and their roles in diet quality, gut microbiota diversity, immune function, and the resilience of sustainable food systems. Complementing this, she uses a Lifestyle Medicine approach to study the exposome, analysing how diet, physical activity, sleep, and stress management interact with biological processes to influence long-term health outcomes.
Through an integrative, One Health– and planetary health–informed perspective, her work bridges nutritional sciences, ecological health, and preventive medicine, advancing innovative strategies to promote health equity and resilience in the face of contemporary global health challenges.
