Pasquale Vari a effectu\u00e9 plusieurs stages de perfectionnement en France et en Italie, dans des restaurants \u00e9toil\u00e9s du <em>Guide Michelin<\/em>. Il obtient en 1991 la m\u00e9daille d\u2019or au concours Prix d\u2019excellence Relais &amp; Ch\u00e2teaux. En 2003, il est chef expert pour le Qu\u00e9bec dans l\u2019analyse des professions de cuisinier et cuisini\u00e8re pour le Sceau rouge Canada. En 2005, il est chef invit\u00e9 au restaurant Le Parlementaire de l\u2019Assembl\u00e9e nationale. En 2006, il cosigne le livre <em>Parmigiano Reggiano. <\/em><\/span><\/p>\n<p><span style=\"color: #383826;\">En 2012, il remporte le prix Renaud-Cyr dans la cat\u00e9gorie chef formateur et en 2013, la Soci\u00e9t\u00e9 des chefs, cuisiniers et p\u00e2tissiers du Qu\u00e9bec lui d\u00e9cerne le prix de chef cuisinier national de l\u2019ann\u00e9e.
