Dipl\u00f4m\u00e9 en cuisine italienne de l\u2019\u00c9cole d\u2019h\u00f4tellerie Vibo Valentia, en Calabre, en 1984, il obtient ensuite deux dipl\u00f4mes de l\u2019ITHQ, un en cuisine professionnelle et l\u2019autre en cuisine \u00e9volutive pour restaurant et h\u00f4tel. Pasquale Vari a effectu\u00e9 plusieurs stages de perfectionnement en France et en Italie, dans des restaurants \u00e9toil\u00e9s du <em>Guide Michelin<\/em>.<\/span><\/p>\n<p><span style=\"color: #808080;\">Il obtient en 1991 la m\u00e9daille d\u2019or au concours Prix d\u2019excellence Relais &amp; Ch\u00e2teaux. En 2003, il est chef expert pour le Qu\u00e9bec dans l\u2019analyse des professions de cuisinier et cuisini\u00e8re pour le Sceau rouge Canada. En 2005, il est chef invit\u00e9 au restaurant Le Parlementaire de l\u2019Assembl\u00e9e nationale.
