As a fiercely proud Sicilian, Pino Cuttaia’s cooking is a celebration of everything good about the island’s food. His personal interpretation of the region’s famous dishes has made his restaurant La Madia a bastion of Sicilian cuisine.
The restaurant received its first Michelin star 2006, just six years after opening, and in 2009 gained a second Michelin star. This was thanks to Pino Cuttaia’s ability to take classic Sicilian dishes such as arancini, couscous and cannoli and transform them into something truly unique.
He comes up with new dishes by focusing on a simple idea, applying his expert culinary technique and then unleashing his artistic, creative side to present them in vibrant, impeccable ways.
Just by looking at dishes like his Anchovy painting or Cloud of Caprese you can tell his mind is full of ideas, images and different ways of thinking.
On May 11th 2018, he will be creating a special menu, sure to please Montreal’s most sophisticated palates, at the Gala de la CCIC , at the prestigious Fairmont Queen Elizabeth. Pino Cuttaia will be welcomed in the illustrious kitchen of Executive Chef Baptiste Peupion, who has earned several distinctions over his career, including the title of Maitre Cuisinier de France, one of only 570 chefs in the world, and seven in Canada, to have received this title.
